Cooking with Syd: Mexican Salad & Salmon

Last night I made a delicious Mexican style salad and salmon for dinner. It’s an easy go-to when you want something quick but on the lighter side. I didn’t forget to leave a recipe for the dressing — it’s not needed! I did my shopping at Whole Foods. Ingredients listed below.

Ingredients

  • Kale

  • Radishes

  • Cilantro

  • Red onion

  • Canned corn

  • Pico de Gallo (pre-made from Whole Foods)

  • Goat cheese

  • Avocado

  • Salmon (bought mine pre-marinaded from Whole Foods with full/garlic)

  • Olive oil

  • Salt

  • Pepper

  • Cayenne

  • Lime

Directions

  1. Set oven to 425

  2. Rinse corn and place on baking sheet. Mix with extra virgin olive oil, salt, pepper and cayenne for seasoning. Put in oven for 15-20 minutes.

  3. Put pre-marinaded salmon on baking sheet, squeeze lime juice on top and cook in oven for 15 minutes

  4. Cut kale, remove stem and chop into small 1 inch pieces

  5. Place kale in a bowl, pour a little olive oil and sprinkle some salt. Massage kale until olive oil is mixed in and let it sit

  6. Cut the rest of your veggies and herbs (red onion, cilantro, radishes)

  7. Remove corn and salmon from oven, assemble salad with all ingredients, add avocado, goat cheese and Pico de Gallo

  8. Squeeze lime on top, mix the salad together and enjoy

That’s what I call a yummy healthy dinner :)
