Valentine's Day sugar cookies

In preparation for Valentine’s Day this week, we were craving some sugar and decided to make some pink, heart shaped sugar cookies!

For those of you that follow our instagram stories, you know we attempted a Vegan, Gluten free sugar cookie recipe using Simple Mills Pancake & Waffle Mix.  They turned out terribly so we decided to just go with an old fashioned, less healthy Sugar Cookie recipe. We used Rachel Parcell’s recipe for inspiration and the the cookies turned out great!

I made a few tweaks to her original recipe / instructions and included them below.

Ingredients for dough:

  • 2 cups of unsalted, softened butter

  • 6 eggs

  • 2 cups sugar

  • 2 teaspoons of vanilla extract

  • 2 teaspoons of almond extract

  • 6 teaspoon baking powder

  • 5 cups of flour

Ingredients we used for frosting:

  • Simple Mills organic vanilla frosting with Coconut Oil

  • Red food coloring

Instructions for dough:

  • Blend softened butter, eggs, vanilla and almond extract together until fully combined

  • Combine sugar with wet ingredients

  • Slowly add baking powder and flour while mixing

  • Once mix is fully blended together, refrigerate dough for at least 30 minutes

  • Remove dough from the refrigerator, preheat oven to 375, and using a lot of flour to avoid sticking, roll out the dough until it is about ¼ inch thick

  • Using your cookie cutter, make the desired shapes and place them on a parchment paper lined cookie sheet

  • Bake for about 6 minutes

  • Remove from oven and let cool on a wire rack before decorating

  • Add food coloring to frosting, we made ombre cookies with 3 different tones of red (light pink, pink and red-ish)
