The best homemade hummus recipe

I love hummus and eat it constantly with fresh veggies or pita.  I took a cooking class at The Wooden Spoon in Andersonville 5 years ago and this was one of the recipes we made and it’s delicious!  I’ve made this so many times since it’s easy and tastes so much better than store bought hummus.

Ingredients

  • Juice of ½ a lemon

  • ¼ cup of water

  • 6 tablespoons of tahini

  • 2 tablespoons of olive oil, plus more for drizzling

  • 1 (15 oz can) of chickpeas, drained/rinsed

  • 2 garlic cloves, original recipe says 1 but I like more

  • ½ teaspoon of kosher salt, plus more for seasoning


Directions

  1. Combine the lemon juice and water in a bowl. In a separate bowl combine the tahini and olive oil together until smooth

  2. Put the chickpeas, garlic and salt into a food processor until grounded (about 15 seconds), scrape down the bowl

  3. Place the lemon/water mixture into the food processor and mix for 1 minute, scape down the bowl again

  4. Add in the tahini and olive oil mixture and and process until smooth about 1 minute

  5. Transfer to a bowl and drizzle with olive oil and any toppings you like. I like italian parsley and pine nuts.

Tip: I’ve added olives or red pepper to my hummus if you want to go non-traditional
